  2. If the cottage cheese releases liquid, you need to drain it. This way, it will require less flour, making the cheesecakes less calorie-heavy.

  3. Transfer the mixture to a large bowl and combine it with sugar. If you like sweet cheesecakes, add 1 tablespoon more of sugar.

  4. Take an egg and separate the yolk from the white. Beat the yolk with a fork, and whisk the white with a pinch of salt until it forms stiff peaks.

  5. Add the beaten yolk, whipped egg white, a pinch of vanilla sugar, and cinnamon to the cheese mixture, if desired. Mix until you have a homogeneous mixture.

  6. Add the sifted flour and mix.

  7. Form the cheese pancakes. To do this, scoop a spoonful of cheese, roll it in flour. It turns out a small ball in your hands, flatten it and place it on a parchment-lined baking sheet.
