  1. The beef should be boiled in advance and cooled. Boil it until tender with the addition of fragrant peppercorns, salt, and bay leaves. Leave the meat to cool in the broth; this will help it stay juicy.

    Once the meat has cooled, shred it into fibers or cut it into thin strips. Place it in a salad bowl.

  2. Cut the pickles into thin strips as well. If they are very watery, you can place them in a sieve for a few minutes to drain excess liquid.

  3. Cut the onion into thin half-rings, rinse them with cold water, and squeeze them slightly with your hands. Then, drain the water and add the rinsed onion to the meat along with the pickles.
