Trim any excess fat from the beef tongue.

Rinse the beef tongue thoroughly and cut it in half. Cover it with cold water and bring it to a boil over high heat.

Bring it to a boil, remove any foam that forms, and then add salt, dried dill, and bay leaves.
Reduce the heat to a minimum and simmer for 1.5 hours.

Next, add the peeled carrot and half of the onion to the pot.
Simmer for an additional 1.5 hours.

Transfer the boiled tongue to cold water.

Peel off the skin. Remove what you can with your hands, and use a knife for the parts that are more difficult to remove.

Transfer it to a convenient container with a lid and refrigerate for at least 3 hours.
