Chicken with vegetables in sour cream sauce

In a heated pan with oil, fry the onion cut into half rings until transparent.

Add peeled and diced eggplant to the onion. Fry, stirring, until the eggplant is soft. You will need 2 medium eggplants.

Add carrot cut into small pieces.

Immediately add the chicken meat cut into pieces to the pan with the carrots. Season with salt and pepper to taste.
Pour in 120-150 ml of water, mix, and simmer covered over low heat for 20-25 minutes. -
Then add the sweet mustard and sour cream. Mix well, simmer uncovered for about 15 minutes.
