In a separate bowl, you need to mix the sugar with the egg and a pinch of salt. Add vanilla sugar to taste if desired.

You don't need to beat, just lightly mix with a fork.

Put the cheese in a bowl, add the egg-sugar mixture and flour to it.

Knead the dough with your hands. This results in a much better consistency than using a spoon. The end result is a sticky and uniform mass.

Now, you'll need that same spoon to shape the cheese pancakes, so they are as uniform in size as possible.

With the spoon, place portions of the mixture on a floured surface.
