The recipe is very simple, and it results in delicious coconut cookies that are moderately sweet and reminiscent of Bounty bars. After trying this recipe once, I often make several batches at once because these cookies disappear quickly.

The butter and eggs should be taken out of the refrigerator in advance, about 2 hours before you start baking.
Take the softened butter, cut it into cubes, and place it in a deep bowl.

Add sugar and vanilla sugar to the butter.

Beat the butter and sugar together using a mixer.

Add 2 eggs to the mixture and beat with the mixer again until everything is well combined and homogeneous.

Add the coconut flakes and mix them thoroughly with a spoon.

You should have a uniform mixture.

Next, sift the flour into the coconut-oil mixture. It's convenient to do this gradually, in several stages. Along with the flour, add the baking powder and a pinch of salt.

Mix everything carefully with a spoon until you have a nice, homogeneous dough.

Now, wet your hands with water and shape the dough into balls.

Place the prepared dough balls on a parchment-lined baking sheet, leaving approximately 3 cm of space between each ball and the edges.
You should have 18 balls in total.

Now, slightly flatten each dough ball with your hands, as this will help the coconut cookies bake evenly.
Place them in a preheated oven at 180 degrees Celsius (about 350 degrees Fahrenheit) for 20 minutes.

The cookies should become slightly golden brown.
