Cream of broccoli soup

We will sauté the vegetables in clarified butter.
Place a piece of clarified butter in a heated skillet.

Immediately add the finely chopped onion to the skillet with the clarified butter. Remember that clarified butter tends to brown quickly. Sauté the onion, stirring, for a couple of minutes.

Add the carrot to the onion, and sauté everything together, stirring, until the carrot becomes tender.

Boil the broccoli in salted boiling water until it becomes tender, which should take about 10 minutes.

Then, add the sautéed onion and carrot to the broccoli.

Add the cream cheese and stir until it completely dissolves into the soup.

Blend the mixture until it becomes smooth and uniform.

I prefer the soup not too thick. If you like it thicker, you can add potatoes when boiling it together with broccoli and cook until the potatoes are done.
