With or without raisins - it's your choice, it doesn't affect the proportions of other ingredients. There's nothing complicated about making these buns; it's a tried and true recipe that's simple and straightforward.
Curd buns with cheese turn out perfect when you use quality yeast and follow the recipe precisely. Adding vanilla sugar is optional, but it gives a different flavor and aroma. The cheese filling is sweet, tender, and very delicious.

Immediately weigh 500 g of flour and sift it.

Make a sponge. In a deep bowl, put the sugar, yeast, and salt.

Add 4 tbsp of flour from the total amount to the sugar, yeast, and salt mixture. Mix it.

Pour in warm milk, specifically warm, not hot. Warm milk will activate the yeast, while hot milk would kill them. Mix well with a whisk.

Cover it with plastic wrap and place it in a warm spot for 20 minutes. In my case, it's a warm spot near the stove on the countertop.

After 20 minutes, start working on the dough. Add 1 egg and the vegetable oil.

Start adding the remaining (sifted) flour in batches and mix it initially with a whisk and later with your hands.

Grease your hands, the dough, and the bowl with oil. Cover the bowl with plastic wrap and let it rise in a warm place for 40 minutes.

While the dough is rising, let's prepare the filling for the curd buns.
Sift the cheese through a sieve. Add the egg yolk, sour cream, and sugar to the cheese, adjusting the sugar to your taste. I have 70 g of granulated sugar. Optionally, add vanilla sugar; I have a 10 g packet. Mix thoroughly.

If you like raisins, add them; if you don't, leave them out. It's that simple.
I had a handful of raisins, which I simply rinsed and added to the filling.
Mix everything again.

The dough has risen and looks beautiful, airy, and soft. Knead it a bit until it's not sticky to your hands.

From the dough, cut off small pieces and weigh each piece to be around 100 g. Of course, you can eyeball the size that you prefer. Shape each piece into a ball and place them directly on a baking sheet lined with parchment paper. You can grease your hands with oil for convenience. Let them rest for 10-15 minutes.

Now, the most interesting and exciting part begins. Use a glass to make indentations for the filling like this.

With this amount of ingredients, you will make 8 curd buns. Six of them went into the oven right away, while the other two are waiting their turn.

Fill each bun with the cheese filling. I use approximately 50 g of filling for each curd bun.

Mix the egg yolk with milk using a fork and brush it over the curd buns for a delicious golden color.
Place them in a preheated oven at 180 degrees Celsius for 25-30 minutes. Keep an eye on your oven; the buns should develop a golden crust but not burn.
