Let's prepare the ingredients we need.

Cut off the tops of the buns and remove the insides. Place the buns on a baking sheet lined with parchment paper.

Place thinly sliced sweet peppers on the bottom of the buns.

Carefully crack two eggs into each bun, keeping the yolks intact. Season with salt and pepper to taste.

Top each bun with sliced tomatoes.

Add pieces of sausage.
