Festive turkey roll with spinach

Heat 2 tablespoons of vegetable oil in a heated frying pan. Add the chopped shallots and garlic, season with salt and pepper. Sauté for a few minutes until the shallots become translucent.

Next, add the spinach to the pan with the onions, pour in 1 teaspoon of lemon juice, and sauté for 2 minutes, stirring constantly. Transfer to a separate bowl to cool.

Once the spinach has cooled, add the grated cheese to it and mix well.

To prepare the turkey fillet, you'll need to "butterfly" it so you can stuff it. Hold your knife parallel to the table, make lengthwise cuts into the thicker part of the fillet, and open it up like a book.

Cover it with plastic wrap and pound it on both sides.

Season the meat with salt and pepper to your taste, and then spread the spinach and cheese filling. Roll it up into a roulade.

Wrap the resulting roulade in bacon strips.

Place parsley stems on the bottom of a baking dish. Arrange the lemon slices on top of the parsley. Pour white dry wine over them.

Transfer the roulade to the baking dish, drizzle it with olive oil, and cover it with foil. Place it in a preheated oven and bake for 30 minutes at 180 degrees Celsius.

Remove the foil, pour the sauce that has formed from the meat and wine on the bottom of the dish over our roulade, and bake for an additional 30 minutes.
