Fluffy Japanese pancakes

Start by separating the egg whites from the yolks. Place two egg yolks in a deep bowl.

To the yolks, add 10 g of sugar.

Whisk the yolks with sugar using a whisk.

Mix the milk and oil thoroughly.

Gradually pour the mixture of milk and vegetable oil into the egg yolks in three portions, while vigorously whisking with a whisk.

Sift the flour along with the baking powder and add it to the batter in portions, continuing to vigorously work it with a whisk. This will result in a thick batter.

Whisk the 4 egg whites with a pinch of salt until stiff peaks form.

Gradually fold the egg whites into the batter, being very gentle and careful with a spatula, until the mixture is uniform. The result should be a light and airy batter.

Place the batter onto a dry, well-heated pan without oil, using about 2 tablespoons of batter for each pancake. Reduce the heat to just below medium, cover with a lid, and bake for about 5 minutes.

Flip them over, cover with a lid again, and bake for another 5 minutes.
