Gedlibzhe – chicken in sour cream sauce
Description
Chicken in Sour Cream Sauce, or 'Gedlibzhe' in Kabardian, is a delicious dish from Cherkess cuisine. Chicken pieces are simmered in a sour cream sauce with onions and garlic. For this recipe, you can use a whole chicken and break it down, or simply buy thighs or drumsticks. I used both. Be sure to make a side dish. It's most delicious with mashed potatoes, buckwheat, or rice. It's truly a delicious dish, with the tenderest chicken that falls off the bone and a wonderful sauce!

Prepare individual portions of chicken pieces.

Chop the garlic finely, and slice the onion into quarter rings.

Sear the chicken on high heat on a small amount of vegetable oil on all sides until a golden crust forms.

Add the onion, stir, and sauté together for a couple of minutes over medium heat.

Then add the garlic and sauté until the onion is golden and the chicken develops a golden crust.
While the chicken is sautéing, prepare the sour cream sauce. Pour the okroshka (water and kvass mixture) into a separate deep bowl. Dissolve the sour cream in it, then gradually add the flour, stirring constantly to ensure the mixture is smooth and without lumps.

The chicken has developed a golden color, and the onion has sautéed nicely. It's time to add the sauce!

Pour in the sour cream sauce.
The amount of broth and sour cream is optional, depending on the size of your skillet. It should be approximately as shown in the photo. -
Add salt, black pepper, paprika, and basil. I add 1 teaspoon of salt, but adjust according to your taste.
Cover with a lid and simmer over low heat. I usually simmer for 40-50 minutes until the meat is tender and easily falls off the bone, but start checking your chicken after 20 minutes of simmering. I also turn the chicken pieces several times to ensure they are evenly cooked in the sauce. -
If the meat is tender and the sauce is to your liking, the dish is ready.
