Lemon Pie

This lemon pie turns out delicate, with a spongy texture and a golden crispy crust. You can use powdered sugar for serving or just enjoy it as is.

Softened heavy cream butter goes into a deep bowl. Add sugar, vanilla sugar, and a pinch of salt to it. Mix with a blender at medium speed until it reaches a uniform consistency.

Add the eggs to the obtained mixture and mix them in.

Mix until smooth.

Add the zest of two lemons and the juice of one lemon. Mix well with a spoon.
Be sure to remove only the yellow zest of the lemon, as the white part can be bitter.

Now, sift the flour into our mixture in two portions, adding the baking powder. Gently mix with a spoon each time. All lumps should dissolve, and the dough should become uniform.

Line a baking dish (a 23 cm in diameter dish is used) with parchment paper. Place the dough in the dish.

Evenly spread the top of the dough to ensure it's smooth and the surface looks nice.
Place it in a preheated oven and bake for 25-28 minutes at 180 degrees Celsius.

The pie should come out golden brown, and you can check its readiness by inserting a wooden stick.
Wait until it has completely cooled, although, judging by the heavenly aroma, that's always a challenging task.

Once the cooled lemon pie is ready, you can dust it with powdered sugar.
