Wash the mint carefully and pat it dry.

Tear the mint leaves. Don't discard the stems; we will need them in this recipe.

Sprinkle the mint with sugar.

Chop the mint with sugar using a knife.

Place the mint stems in a saucepan, add 2 tablespoons of water, and 1 tablespoon of vinegar. Bring it to a simmer over low heat, then remove from the heat and discard the stems.
