Using a blender or a rolling pin, crush the cookies into fine crumbs. Melt the heavy cream and add it to the cookies, then mix thoroughly.

Line the bottom of a baking dish with parchment paper. Place the cookie and cream mixture into it, spread it evenly, and press it down.
Place the dish with the base in the freezer for 15 minutes.

Transfer the cheese into a convenient deep bowl. Add condensed milk, vanilla extract, and fresh lemon juice to it.
