Description
The classic panettone recipe is quite complex, but there is a simpler way to make Italian festive bread.

Soak the raisins in cognac for a few minutes.

Set aside 1 tablespoon of sugar and mix the rest with vanilla sugar and salt, then combine it with the flour.

Warm the milk to approximately 36 degrees Celsius (98 degrees Fahrenheit), add the reserved tablespoon of sugar, dissolve the yeast, and mix. Allow the yeast mixture to sit in a warm place for 15-20 minutes.

Soak the raisins in water for 20 minutes, then rinse them with cold water and soak them in cognac. After 10-15 minutes, pat them dry with a towel and grease them with butter.

Beat the egg yolks with a piece of butter.

Combine the yeast mixture with the eggs, add the flour, and make a soft dough.

Add the raisins and mix thoroughly until the dough no longer sticks to your hands.

Cover the bowl with the dough and let it rise in a warm place for 3 hours.

Grease a baking pan with butter and fill it with the dough, filling it about one-third full. Let it rise for another half-hour in a warm place.

Bake the bread for about 40 minutes in an oven at 170 degrees Celsius (338 degrees Fahrenheit).
