Pasta in Cheese Sauce
Description
Pasta with cheese sauce baked in the oven is a very tasty and hearty dish for lunch or dinner. Lots of cheese, lots of sauce, a few spices - appetizing, simple, and quick. The sauce will be based on flour, cream butter, and milk, then we'll add several types of hard cheese, pasta, and for a crispy crust before baking, sprinkle with a mixture of breadcrumbs and aromatic herbs. Only high-quality pasta from hard wheat varieties are needed.

Boil the pasta until al dente, almost cooked.

Melt the butter in a saucepan.

When it is halfway melted, add the flour and begin stirring continuously with a spatula.

The mixture should become smooth and homogeneous.

The milk should be warmed slightly, just enough to be warm. Pour it into the mixture in parts, stirring constantly over low heat. Stir vigorously with a whisk until you've added all the milk and there are no lumps.

Add spices according to taste. Salt very carefully, as the amount depends on how salty the cheese you are using is. I use curry powder, ground nutmeg, salt, and black pepper.

Cook, stirring constantly, until thickened.

It's better to use 2-3 types of hard cheese for a richer and cheesier flavor.
Grate the cheese using a coarse grater beforehand, as we need to mix the sauce continuously.

Add all the cheese to our sauce, stirring continuously.

Stir constantly until the cheese is melted.

Transfer our cooked pasta into the sauce.

And mix everything well. This is already a ready dish that can be served on the table. But I suggest sending it to the oven for a short time.

Transfer the pasta in sauce to a convenient baking dish, leveling the top. Sprinkle with a mixture of breadcrumbs and Provencal herbs, and place in a preheated oven at 200 degrees Celsius for 8-10 minutes until golden brown.
