Description
Pesto is often served with tortellini – Italian stuffed pasta, spaghetti, tagliatelle, fettuccine, and other types of pasta, as well as in minestrone soup. It is used to make a savory cake with cheese, ham, and tomatoes, serving as a cream-like filling. Pesto sauce can be brushed onto fish, chicken, or pork cutlets before baking them in the oven. Risotto with spinach and seafood salads also become more appetizing when served with this sauce. In short, you should definitely prepare and try pesto.

For pesto sauce, you will need green basil, olive oil, Parmesan cheese, garlic, and pine nuts.

Wash and dry the basil (2 bunches). Peel and roughly chop the garlic (3 cloves).

Grate Parmesan cheese (50 g) finely.

In a blender, combine the basil, garlic, pine nuts (2 tbsp), Parmesan cheese, a pinch of salt, and olive oil (50 ml). It's better to add the olive oil gradually to achieve the desired consistency.
Using an immersion blender may be more convenient, as basil leaves can stick to the blender's bowl, and you may need to blend in several batches.

Blend everything until you have a homogeneous consistency. You can store the sauce in an airtight container in the refrigerator for 2-3 days.
