Potato casserole with spinach, cream sauce, and cheese is a delicious, hearty, and easy dish. It can be served as a main course or as a side dish to meat and fish dishes. The potatoes are tender, with a creamy-cheesy flavor. Spinach pairs wonderfully with potatoes, and dried garlic and Provencal herbs add incredible aroma.

  1. Peel and chop the potatoes into small pieces, then transfer them to a saucepan.

  2. Cover the potatoes with cold water, add a pinch of salt, and bring to a boil. Simmer until tender, then drain completely.

  3. Beat the eggs in a deep bowl, add a pinch of salt, ground pepper, dried garlic, and Provencal herbs. Mix well.

  4. Pour in the cream with a fat content of at least 30% and mix.

  5. Grate the cheese finely, add 70g to the mixture, and mix thoroughly. The remaining 80g of cheese will be used for sprinkling on top of the casserole.

  6. Chop the onion finely and sauté it in a small amount of olive oil until lightly golden.

  7. Add the fresh chopped spinach to the onions.

  8. Cook everything together, stirring, for 2-3 minutes. Season with a little salt and add pepper to taste.

  9. Grease a baking dish with olive oil. Arrange the boiled potatoes in an even layer, then spread the spinach and onion mixture on top.

  10. Pour our sauce over the top.

  11. Sprinkle the remaining cheese on top and bake in a preheated oven for about 20 minutes at 180 degrees Celsius.
