Instructions
-
Rinse the potatoes well, as we will be baking them with the skin on. Make several shallow cuts on each tuber and wrap them in foil. Bake in the oven for 20 minutes at 200 degrees Celsius.
-
While the potatoes are baking, let's prepare the filling. Chop the onion finely, and grate the cheese finely. Set aside about a fifth of the grated cheese for later use; it will be needed.
-
In a deep bowl, mix the cheese, green onions, and sour cream. If needed, add salt to taste.
-
Remove the foil from the cooked potatoes and cut off the tops on each side. Use a sharp knife and a spoon to create cavities for the filling.
-
Place the filling inside each potato, wrap each potato with two strips of bacon, and secure with toothpicks. Bake for 30 minutes at 180 degrees Celsius.
-
Take out the potatoes from the oven, sprinkle with the remaining cheese, and return to bake for another 15 minutes.
-
Potatoes wrapped in bacon with cheese, sprinkle with green onions and serve hot. Enjoy your meal!
