Salmon quiche
Description
Quiche with red fish and creamy topping. A very tasty open pie with delicate pastry and a tender filling. The recipe uses trout, but you can use any red fish. This pie is easy to make, and you can experiment with fillings while using a shortcrust pastry base.

If your red fish is lightly salted or even smoked, you don't need to add salt.

In a deep bowl, put the flour and add cold cream butter cut into cubes.

Use your hands to rub the butter and flour into a crumbly texture.

Add the egg, a pinch of salt, and 6 tablespoons of warm water.

Knead the dough with your hands until it's smooth.
Wrap it in plastic wrap and refrigerate it for 30 minutes.

Cut the fish, remove any bones, and if needed, season it with salt to taste.

Grate the cheese finely.

Beat 4 eggs with a whisk. Pour in the low-fat cream or milk, and mix well with the whisk.
Take 4 large eggs or 5 small ones.

Add the grated cheese and a bit of fresh dill to the egg mixture. Mix well.

The dough is very soft, elastic, and easy to work with. Transfer it to a baking dish and use your hands to spread it over the bottom and up the sides.

Place the fish on the bottom and pour the cheese and cream mixture over it.

Evenly distribute the cheese mixture over the surface.
The oven should already be preheated.
Bake for 30-40 minutes at 180 degrees Celsius.

The pie should become golden brown.
Allow the pie to cool a bit, and then you can serve it.
