Thai-style chicken and vegetable rice

Cook the rice until fully cooked using your preferred method. I cook it in a multicooker using a ratio of 1 cup of well-rinsed rice to 1.5 cups of water.

Beat one egg slightly with a fork and pour it onto a heated skillet with some butter.

Continuously stirring, fry it for about 30 seconds. Transfer to a separate bowl.

In the same skillet, sauté finely chopped onion and garlic for 1 minute, stirring constantly.

Add diced chicken breast and sauté for another 3-4 minutes, stirring occasionally.

Add salt and pepper to taste.

Add diced carrots, as well as frozen peas and corn, to the skillet. Stir-fry everything together for another 3 minutes.

Now add the cooked rice and soy sauce, and mix everything together.

Also add the egg, and mix everything together again.

Continue cooking for a few more minutes and then remove from heat.
