Tuna and sweet pepper pie “Empanada”
Description
Tuna and sweet pepper pie "Empanada" is a traditional Spanish dish that's easy to prepare. We'll be using ready-made puff pastry, which makes it even simpler and quicker. The filling is delicious and can even be enjoyed on its own. Tuna pairs wonderfully with vegetables and boiled eggs. All of this is complemented by the tender and slightly crispy puff pastry.
This tuna and vegetable pie isn't just tasty but also quite filling. You can take it with you on a picnic, to the office, or on a trip as a snack. The shape of the pie is rectangular, but you can make it round if you prefer.

Dice the sweet pepper.

Finely chop the onion.

Finely chop the boiled egg.

Blanch the tomatoes, remove the skin, and finely chop the flesh. Canned tomatoes in their juice will also work.

In a heated pan with a small amount of oil, sauté the onions until they become translucent. Then add the peppers and sauté until the peppers are tender, stirring occasionally.

Then add the tomatoes and cook until the liquid evaporates.

Drain the liquid from the tuna as much as possible and add it to the skillet. Mix, add salt and pepper to taste. Taste it and adjust the seasoning if needed. Turn off the heat.

Transfer the boiled egg to the skillet and mix it in.
The filling is ready.

Preheat the oven.
You should have two rectangular pieces of dough, approximately 25*15 cm each.
Transfer one piece of dough onto a baking sheet lined with parchment paper. Prick the dough with a fork. Spread the entire filling evenly, leaving the edges free.

Cover it with the second piece of dough, and use a fork to seal the edges tightly. Using a sharp knife, make cuts for future portions without reaching the filling. Also, prick the surface with a fork in a few places.

Brush the top with egg yolk or milk. I also sprinkled sesame seeds because I really like them. Place it in the preheated oven for approximately 30 minutes or until the top is golden brown at 180 degrees Celsius.

Cut the tuna and sweet pepper pie into individual portions and serve.
